I am a self proclaimed recipe junkie. Love searching for new recipes and trying them out, making a few adjustments and adding them to my dinner rotation. I'd also like to point out that everything you see here is exactly what my kids eat. They get a special meal made separately. Don't think your kid is too young for great food! I'm also cooking with a challenging list of food allergies! Most recipes are peanut, dairy, wheat and nut free!

Lemon Chicken Thighs
Surprise, surprise, I substitute chicken thighs for breasts in this meal. Thighs just tend to have more flavor and are so much juicier! The best thing about this recipe is the braising of the chicken meat and the crispy skin. I usually have to cook mine at 425 for a bit longer to get the crispy skin. And don't be scared of all the garlic.....garlic is tasty and so good for you!
